Fried Rice Stuffed Capsicum



This recipe is not just for kids but everyone !! Filled with lots of colorful veggies and some carbs it is a perfect dinner option. Also, a stylish way to serve fried rice in a get-together. It is possible that kids might just eat the rice inside it.😜


Ingredients:

1. 3 capsicums (any color)
2. 2 bowls steamed rice
3. 1/2 bowl finely grated carrots
4. 1 onion finely chopped
5. 1/2 bowl boiled peas
6. 1/2 teaspoon grated ginger
7. 1 teaspoon grated garlic
8. 1 chopped tomato
9. 1 tablespoon grated mozzarella cheese
10. Salt to taste
11. Red chilli powder to taste
12. 1/2 teaspoon cumin seeds
13. 3 tablespoon vegetable oil

Steps:

1. In a wok heat oil and add cumin seeds, grated ginger, and garlic. Now add onion and saute till it becomes pink.

2. Add chopped tomato, peas and carrots and saute for a minute. Add a little salt and red chilli powder and cover the wok will lid. Cook till the vegetable become soft.

3. Now add rice and stir. Add more salt upto taste and cook rice for 5 more minutes.

4. Now cut capsicums into halves and remove the seeds. Fill fried rice in the capsicum bowls.


5. Sprinkle some cheese on the top. You may also use processed cheese instead of mozzarella cheese.

6. Now put the stuffed capsicums in a microwave for 8-10 minutes till the capsicum softens. You may also bake the stuffed capsicums. 
7. Sprinkle more cheese for garnishing and serve hot.
