Simple and Easy Homemade Pav Bhaji





Pav bhaji originated in Mumbai and is one of the most famous street food in India. Pavs are very soft plain bread buns. The bhaji(vegetable curry) can be made with whatever vegetables you have handy at home but if possible do try to add capsicum as it enhances the flavor. 


Ingredients:

1. 2 potatoes chopped
2. 1 bowl cauliflower florets
3. 1 bowl chopped carrots
4. 1 bowl chopped capsicum
5. 1 bowl peas
6. 1 finely chopped onion
7. 2 finely chopped tomatoes
8. 1 teaspoon grated garlic
9. 1 teaspoon grated ginger
10. 1/2 teaspoon cumin seeds
11. 1/2 teaspoon fenugreek seeds
12. 1 teaspoon dry coriander powder
13. 1/2 teaspoon turmeric
14. Salt to taste
15. Red chilli powder to taste
16. 2 tablespoon pav bhaji masala
17. 1 teaspoon garam masala
18. 2 tablespoon vegetable oil
19. Butter
20. Pavs (plain bread buns)
21. Fresh coriander leaves


Steps:

1. Boil chopped potatoes, cauliflower, carrots, capsicum, peas until soft. After the vegetables cool down grind coarsely.




2. In a wok heat oil. Add cumin seeds, fenugreek seeds. Then add chopped ginger garlic and onion. Saute till onion turns translucent. Add tomatoes and saute for a minute.




3. Now add dry coriander powder, turmeric, salt and red chilli powder and saute till tomato softens and a slight pureed mixture is formed.
4. Now add the grinded vegetables and stir for 2 minutes. Add pav bhaji masala and cook for 10 minutes.



5. Meanwhile lightly spread butter on both sides of pavs and keep aside.
5. Now add garam masala and butter and cook for 2 more minutes.
6. Now toast the pavs in a flat pan till they turn golden brown.
7. Season the bhaji with coriander and butter and serve hot with chopped onions and pickle on the sides.
