Peas and Corn Kebab





Kebab have always been a delicacy in India and a most common starter in all Indian restaurants. The best part about kebabs is that you can put in whatever vegetables you like and give it your own twist. Being crispy and soft at the same time they are liked by kids too and a delicious way to make them eat vegetables. We like to have them sometimes in a Sunday morning breakfast or as evening snacks with the most loved masala tea. My mouth is watering as I write!!

You must have surely had different forms of kebab outside but do try these once at home as they are very easy to make and yum too😋😋. And if you are able to make your kids eat these kebabs with hidden zucchini inside then yay 💪you win as a mother in making kids eat vegetables.

Ingredients:

1. 1 bowl of peas
2. 1 bowl of corn
3. 1 bowl of grated zucchini
4.  1/2 bowl roasted gram flour
5.  1/2 bowl yellow corn flour
6.  1 teaspoon garam masala
7.  1/2 teaspoon cumin seeds powder
8.  1 teaspoon fennel seeds
9. 1 teaspoon coriander seeds
10. Bread crumbs for coating
11. Red chilli power up to taste
12. Salt up to taste
13. Vegetable oil 
14. Whole grain flour or plain flour 1 tablespoon

Steps:

1. In a pan boil pea and corn for 10 minutes. After boiling drain the water and crush peas and corns coarsely.
2. Add some water to whole grain flour in a bowl and keep aside. This will be used for coating the kebabs before frying.
3. In a large bowl add crushed peas, corn, and grated zucchini. Simultaneously keep a flat pan with oil for heating.
4. Grind fennel seeds and coriander seed coarsely in a grinder.
5. Add grinded fennel and coriander seeds powder, cumin seeds powder into the vegetable mixture.
6. Add salt, red chilli powdered garam masala to taste to the mixture. 
7. As of now the mixture will be moist and loosen as zucchini starts leaving water. So now add roasted chickpea flour and corn flour as binding agents into the mixture and mix all the ingredients well. If you wish you can rinse extra water from grated zucchini.
8. Take some mixture to make small round balls and flatten them and dip them in the whole grain flour solution and then delicately tap the kebab in bread crumbs. Make sure the kebab is covered with bread crumbs on all sides.
9. Put the kebabs delicately in the pan one by one. Let them cook from one side and then flip them. Shallow fry till they become nice golden brown.
10. Serve hot with ketchup/cheese dip for kids or coriander/spinach chutney for adults.
