Beetroot rice





Beetroots are rich in iron and vitamin C and good for hemoglobin. Beets also contain anti-oxidants and a lot of other nutrients like magnesium, potassium, copper. Due to high fiber content beets help in digestion too. So for kids who face constipation problem including beets in their diets would help them. But it is difficult to make kids have steamed beetroot or its juice. So prepare this beetroot rice for them and they will come to you asking for more!!


Ingredients:

1. 2 bowls of steamed rice
2. 1 beetroot
3. 1 onion finely chopped
4. 1 teaspoon fresh ginger garlic paste
5. 1/2 teaspoon cumin seeds
6. 1/2 teaspoon mustard seeds
7. 1 teaspoon coriander powder
8. 1/2 teaspoon turmeric powder
9. Salt to taste
10. Red chilli powder to taste
11. 2 tablespoon vegetable oil


Steps:

1. Heat oil in a wok.
2. Add cumin seeds and mustard seeds and let them splutter.
3. Now add chopped onion and saute till it becomes pink.
4. Add coriander powder, turmeric powder, salt and red chilli powder and saute the spices for 5 seconds.
5. Now add grated beetroot. Cover it with lid and let it cook till beetroot becomes soft.
6. Now add steamed rice and stir well.
7. Serve hot with yoghurt.
